Tavë Kosi (Lamb with yogurt)

Ingredients:

  • 600g diced lamb (shoulder or leg)
  • 70g rice
  • 50g butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 300ml water
  • Salt and pepper to taste

For the Yogurt Sauce:

  • 750g Greek yogurt
  • 4 eggs
  • 50g flour
  • 50g butter
  • Salt and pepper to taste

Instructions:

  1. Prepare the Lamb:

    • In a large pan, melt the butter with the olive oil over medium heat. Add the diced lamb and brown it on all sides.
    • Add the minced garlic and oregano, then pour in 300ml of water. Season with salt and pepper.
    • Cover the pan and let it simmer for about 45-50 minutes until the lamb is tender.
  2. Add the Rice:

    • Stir in the rice and cook for another 10 minutes until the rice absorbs most of the liquid.
  3. Prepare the Yogurt Sauce:

    • In a separate saucepan, melt the butter and stir in the flour to make a roux. Cook for 2 minutes, stirring constantly.
    • In a mixing bowl, combine the Greek yogurt and eggs. Season with salt and pepper.
    • Gradually add the roux to the yogurt mixture, stirring well to combine.
  4. Combine and Bake:

    • Preheat your oven to 180°C (350°F).
    • Transfer the lamb and rice mixture to a baking dish.
    • Pour the yogurt sauce over the lamb and rice, spreading it evenly.
    • Bake for about 40-45 minutes until the top is golden brown.
  5. Serve:

    • Let the Tavë Kosi cool slightly before serving. It’s best enjoyed warm, often with a side of fresh salad or crusty bread.
