Ingredients:
- 600g diced lamb (shoulder or leg)
- 70g rice
- 50g butter
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 300ml water
- Salt and pepper to taste
For the Yogurt Sauce:
- 750g Greek yogurt
- 4 eggs
- 50g flour
- 50g butter
- Salt and pepper to taste
Instructions:

Prepare the Lamb:
- In a large pan, melt the butter with the olive oil over medium heat. Add the diced lamb and brown it on all sides.
- Add the minced garlic and oregano, then pour in 300ml of water. Season with salt and pepper.
- Cover the pan and let it simmer for about 45-50 minutes until the lamb is tender.

Add the Rice:
- Stir in the rice and cook for another 10 minutes until the rice absorbs most of the liquid.

Prepare the Yogurt Sauce:
- In a separate saucepan, melt the butter and stir in the flour to make a roux. Cook for 2 minutes, stirring constantly.
- In a mixing bowl, combine the Greek yogurt and eggs. Season with salt and pepper.
- Gradually add the roux to the yogurt mixture, stirring well to combine.

Combine and Bake:
- Preheat your oven to 180°C (350°F).
- Transfer the lamb and rice mixture to a baking dish.
- Pour the yogurt sauce over the lamb and rice, spreading it evenly.
- Bake for about 40-45 minutes until the top is golden brown.

- Let the Tavë Kosi cool slightly before serving. It’s best enjoyed warm, often with a side of fresh salad or crusty bread.
