Ingredients:

  • 6 bell peppers (a mix of red, yellow, and green)
  • 400 grams ground beef
  • 3 onions (diced)
  • 75 grams rice
  • 40 grams tomato puree
  • 1 tablespoon basil
  • 1 tablespoon rosemary
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Prepare the filling:

    • Heat some olive oil in a pan over medium heat.
    • Add the diced onions and sauté for about 2 minutes.
    • Add the ground beef and cook until browned.
    • Stir in the rosemary, basil, salt, pepper, and tomato puree.
    • Let the mixture cook for about 10 minutes, then remove from heat and let it cool for 15 minutes.
    • Once cooled, stir in the rice.
  2. Prepare the peppers:

    • Preheat your oven to 180°C (350°F).
    • Cut the tops off the bell peppers and remove the seeds and membranes.
    • Stuff the peppers with the meat mixture, ensuring they are fully filled.
    • Place the stuffed peppers in a baking dish. If there’s any leftover filling, place it around the peppers in the dish.
  3. Bake:

    • Drizzle a bit of olive oil over the stuffed peppers.
    • Bake in the preheated oven for about 1 hour, turning occasionally if desired.
  4. Serve:

    • Serve the stuffed peppers hot, warm, or even cold. They pair well with a side of yogurt or a fresh salad.
