Ingredients:

  • For the filling:

    • 750 grams fresh spinach (washed and chopped)
    • 2 eggs
    • 200 grams feta cheese (crumbled)
    • 1 bunch green onions (chopped)
    • Salt and pepper to taste
  • For the pastry:

    • 500 grams phyllo dough (thawed by package instructions)
    • 1 cup olive oil (or melted butter)

Instructions:

  1. Prepare the filling:

    • In a large bowl, mix the chopped spinach, eggs, crumbled feta cheese, and chopped green onions.
    • Season with salt and pepper to taste. Set aside.
  2. Assemble the pie:

    • Preheat your oven to 180°C (350°F).
    • Grease a baking dish with olive oil or melted butter.
    • Lay a sheet of phyllo dough in the dish and brush with olive oil. Repeat this process until you have 6-8 layers.
    • Spread half of the spinach mixture evenly over the phyllo layers.
    • Add another 6-8 layers of phyllo dough, brushing each layer with olive oil.
    • Spread the remaining spinach mixture over the phyllo layers.
    • Finish with another 6-8 layers of phyllo dough, brushing each layer with olive oil.
    • Tuck in the edges of the phyllo dough to seal the pie.
  3. Bake:

    • Using a sharp knife, cut the pie into squares or diamonds.
    • Bake in the preheated oven for about 45 minutes, or until the top is golden brown and crisp.
  4. Serve:

    • Let the pie cool slightly before serving. Enjoy it warm or at room temperature.
