Ingredients:

For the filling:
- 750 grams fresh spinach (washed and chopped)
- 2 eggs
- 200 grams feta cheese (crumbled)
- 1 bunch green onions (chopped)
- Salt and pepper to taste

For the pastry:
- 500 grams phyllo dough (thawed by package instructions)
- 1 cup olive oil (or melted butter)

Prepare the filling:
- In a large bowl, mix the chopped spinach, eggs, crumbled feta cheese, and chopped green onions.
- Season with salt and pepper to taste. Set aside.

Assemble the pie:
- Preheat your oven to 180°C (350°F).
- Grease a baking dish with olive oil or melted butter.
- Lay a sheet of phyllo dough in the dish and brush with olive oil. Repeat this process until you have 6-8 layers.
- Spread half of the spinach mixture evenly over the phyllo layers.
- Add another 6-8 layers of phyllo dough, brushing each layer with olive oil.
- Spread the remaining spinach mixture over the phyllo layers.
- Finish with another 6-8 layers of phyllo dough, brushing each layer with olive oil.
- Tuck in the edges of the phyllo dough to seal the pie.

Bake:
- Using a sharp knife, cut the pie into squares or diamonds.
- Bake in the preheated oven for about 45 minutes, or until the top is golden brown and crisp.

- Let the pie cool slightly before serving. Enjoy it warm or at room temperature.
