Ingredients:
- 400g filo pastry (about 12 sheets)
- 2 eggs
- 300g cottage cheese
- 50g crumbled feta cheese
- 4 tbsp olive oil
- 220ml water
- 1/2 tsp dried basil
- Salt and pepper to taste
Instructions:

Prepare the Filling:
- In a mixing bowl, combine the cottage cheese, eggs, and crumbled feta. Mix well until you have a thick mixture.

Fill the Pastry:
- Lay out four sheets of filo pastry, brushing each sheet with olive oil.
- Place some of the cheese mixture in the center of the pastry. Fold the pastry into your desired shape (squares, triangles, or rolls).

Prepare for Baking:
- Repeat the filling process to create multiple byreks.
- Oil the base of a baking dish and place the byreks inside. Brush the tops with olive oil and sprinkle with dried basil.

Bake:
- Preheat your oven to 180°C (350°F).
- Bake the byreks for about 30 minutes or until they are golden brown.

Optional Step:
- If you are not serving the byreks immediately, pour half a glass of cold water over the top and into the base of the dish. Cover with two tea towels and leave for 1 hour before serving.
