Ingredients:

  • 400g filo pastry (about 12 sheets)
  • 2 eggs
  • 300g cottage cheese
  • 50g crumbled feta cheese
  • 4 tbsp olive oil
  • 220ml water
  • 1/2 tsp dried basil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Filling:

    • In a mixing bowl, combine the cottage cheese, eggs, and crumbled feta. Mix well until you have a thick mixture.
  2. Fill the Pastry:

    • Lay out four sheets of filo pastry, brushing each sheet with olive oil.
    • Place some of the cheese mixture in the center of the pastry. Fold the pastry into your desired shape (squares, triangles, or rolls).
  3. Prepare for Baking:

    • Repeat the filling process to create multiple byreks.
    • Oil the base of a baking dish and place the byreks inside. Brush the tops with olive oil and sprinkle with dried basil.
  4. Bake:

    • Preheat your oven to 180°C (350°F).
    • Bake the byreks for about 30 minutes or until they are golden brown.
  5. Optional Step:

    • If you are not serving the byreks immediately, pour half a glass of cold water over the top and into the base of the dish. Cover with two tea towels and leave for 1 hour before serving.
