Ingredients:
500g sheep's cheese (telemea or salty cheese)
300g of flour
150g cold butter
2 eggs
100ml yogurt
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon sugar (optional, for a slightly sweet taste)
Oil (for greasing)
Instructions:
Preparation of the dough:
In a large bowl, mix the flour with the baking powder and salt.
Add the cold cubed butter and knead until you get a sandy texture.
Add the eggs and yogurt, then knead until the dough becomes smooth and elastic. If it is too dry, you can add a little cold water.
Wrap the dough in cling film and leave it in the fridge for at least 30 minutes.
Preparation of the filling:
Grate the sheep's cheese and mix it with a beaten egg. If you want, you can also add some chopped dill for extra flavor.
Forming the pies:
Divide the dough into equal pieces and roll each piece into a thin sheet.
Place a spoonful of filling on each sheet and fold the edges to form round or square pies.
Brush the pies with a little oil on top.
Baking:
Preheat the oven to 180°C.
Place the pies on a baking tray lined with baking paper and bake for 25-30 minutes or until golden and crispy.
Service:
Serve the pies warm with a glass of yogurt or cream. They are perfect for a snack or a traditional breakfast.
